Ingredients:


For the Steak:


• 2 ribeye steaks (about 1.5 inches thick)

• 2 tablespoons olive oil

• Salt and freshly ground black pepper

• 4 cloves of garlic, smashed

• 4 sprigs of fresh thyme

• 2 sprigs of fresh rosemary

• 2 tablespoons unsalted butter


For the Garlic Herb Butter:


• 1/2 cup unsalted butter, softened

• 3 cloves garlic, minced

• 1 tablespoon fresh parsley, finely chopped

• 1 teaspoon fresh thyme, finely chopped

• 1 teaspoon fresh rosemary, finely chopped

• 1/2 teaspoon salt

• 1/4 teaspoon freshly ground black pepper

• 1 teaspoon lemon juice


Instructions:


1. Prepare the Garlic Herb Butter:


• In a small bowl, combine the softened butter, minced garlic, parsley, thyme, rosemary, salt, pepper, and lemon juice. Mix well until all the ingredients are thoroughly incorporated.

• Spoon the mixture onto a piece of plastic wrap or parchment paper. Roll it into a log shape, twisting the ends to seal.

• Place the butter log in the refrigerator to chill for at least 30 minutes.


2. Prepare the Steaks:


• Take the ribeye steaks out of the refrigerator and let them sit at room temperature for about 30 minutes. This helps ensure even cooking.

• Pat the steaks dry with paper towels. Rub both sides with olive oil and season generously with salt and freshly ground black pepper.


3. Sear the Steaks:


• Preheat a cast-iron skillet over high heat until it’s smoking hot.

• Place the steaks in the skillet and sear for 2-3 minutes on each side without moving them. This will give the steaks a nice, crispy crust.

• Reduce the heat to medium and add the smashed garlic, thyme, rosemary, and butter to the skillet.

• Tilt the skillet slightly and use a spoon to continuously baste the steaks with the melted butter and herbs for an additional 1-2 minutes on each side, or until they reach your desired level of doneness. Use a meat thermometer for accuracy (130°F for medium-rare, 140°F for medium).


4. Rest the Steaks:


• Remove the steaks from the skillet and place them on a cutting board. Tent them loosely with aluminum foil and let them rest for about 5-10 minutes. This allows the juices to redistribute, ensuring a juicy steak.


5. Serve:


• Slice the garlic herb butter into discs and place a few pieces on top of each steak just before serving. The butter will melt over the hot steak, adding an extra layer of flavour.

• Serve the steaks with your favourite sides, such as roasted vegetables, mashed potatoes, or a fresh salad.
