Ingredients:

1 lb (450g) lean beef sirloin or tenderloin, thinly sliced

2 tablespoons low-sodium soy sauce

1 tablespoon olive oil

1 tablespoon cornstarch

1 bell pepper, sliced

1 small onion, sliced

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

1 cup broccoli florets

1 cup snap peas

1 medium carrot, thinly sliced

1 zucchini, sliced

Cooked quinoa or brown rice, for serving

Sesame seeds and chopped green onions, for garnish (optional)

 

Instructions:

1. Marinate the Beef:

In a bowl, combine the low-sodium soy sauce and cornstarch. Add the sliced lean beef and toss to coat. Let it marinate for 10-15 minutes while you prepare the vegetables.

2. Prepare the Vegetables:

Slice the bell pepper, onion, and carrot, mince the garlic and ginger, cut the broccoli into florets, and slice the zucchini. Set aside the snap peas.

3. Cook the Beef:

Heat the olive oil in a large skillet or wok over medium-high heat. Add the marinated beef in a single layer and cook for 2-3 minutes until browned. Remove the beef from the skillet and set aside.

4. Stir-Fry the Vegetables:

In the same skillet, add a bit more olive oil if needed. Add the garlic and ginger and sauté for 30 seconds until fragrant. Then, add the bell pepper, onion, broccoli, carrot, snap peas, and zucchini. Stir-fry for 5-6 minutes until the vegetables are tender-crisp.

5. Combine and Serve:

Return the beef to the skillet and stir-fry everything together for another 2-3 minutes until heated through and the flavours are well combined.

6. Serve:

Serve the lean beef and veggie stir-fry over cooked quinoa or brown rice. Garnish with sesame seeds and chopped green onions if desired.
